In late April and early May of this year I, Joe Fiorino, Owner of Fiorino Italian Imports, visited Italy for the first time along with my wife Carolyn. The reason for the visit was to go to the birthplace of my Mother, Nicoletta, in San Martino in Pensilis. This hilltop village is directly across Italy form Naples on the Adriac Sea. Beautiful place. We started our vacation in the Tuscany area and on our 4th day, we were in Chianti in Greave.

We asked for directions to a charming restaurant and were directed to La Moule, high up a hill overlooking the breathtaking Chianti vineyards. When we walked into the restaurant and were seated, the first question was, would you like to taste our wines. Of course we said yes. When the wine was presented it was poured from the Centellino. I asked the waiter, whats that on top of the wine bottle and where can I buy one. He told me, in his broken english, that it was a top of the bottle aerator, made of hand blown glass here in Italy. Its called the centellino and it makes a new bottle of wine taste better. He said he would be happy to present me one at the end of the evening. At the end of the evening, wrapped with a bow and added to my bill, I was presented with my first centellino. I told my wife then and their that I think I have a new project that is going to keep me very busy. I wanted this beautiful hand blown Italian glass object to be on every wine bottle in North America.

The centellinos innovative design took 3 years to develop and achieve the proper shape and desired decanting results. The centellino is the only aerator to be proven with laboratory test. (See Madurai Analytical) Besides being a beautiful glass object that enhances any table, it has been proven to improve the taste of a newly opened bottle of wine. When the wine is being poured into the centellino, you can see it covering the walls of the amphora. The wine is aerated, much like when you swirl the wine in the glass, where you can examine all the hues and textures in the wine. When you pour from the centellino, you can see giant bubbles in the back of the centellino as it's being poured, this air aerates the wine and brings out the flavor and wonderful bouquet of the wine immediately. The full flavor and body of the wine are released. This would all be missed if not decanted. But unfortunately, traditional decanting methods take up to an hour or more and the true taste of the wine is often missed. Until the centellino!
